Oil Spill Noodles


8 cups Water
1 pkg Konjac Noodles (drained)
6 whole Bok Choy
1 whole Green Onion (finely chopped)
4 whole Garlic Cloves (minced)
1 whole Ginger (small piece, minced)


1 – In a pot, bring the water to a boil and add the bok choy. Cook until tender. Do not add salt to boiling water.

2 – In a separate pot, over a medium flame, heat the soy sauce, vinegar, 2 tsp of the mushroom soaking water, the chopped mushrooms, the garlic, ginger, and the white part of the green onion (save the green part for the final presentation). Cook, adding a little of the bok choy water as needed to avoid burning.

3 – Add the noodles to the sauce, tossing to cover completely. Cook 2 minutes.

4 – Add bok choy, remaining green onion, red chilis, and a pinch of salt and pepper to taste. Serve immediately.
