Los Tres Golpes

Ingredients

1 tbsp Canola Oil
2 whole Eggs
1 whole Spanish Onion (thinly sliced)
2 tbsp Apple Cider Vinegar
1 cup Ground Turkey
1 whole Avocado
1 thin slice Low-Fat Cheese
Oregano
Paprika
Salt and Pepper to Taste

Steps

1 – In a bowl, mix the sliced onions and the vinegar and set aside. (This can be done ahead of time and refrigerated.)

2 – In a separate bowl, mix the ground turkey, a pinch of salt, pepper, oregano and paprika. Mix well. Shape into desired shape (either sausage ‘links’ or round disks). Set aside.

3 – In a nonstick pan, heat the canola oil on medium heat. Add ground turkey disks (or ‘links’), sauté until browned on both sides, and thoroughly cooked.

4 – Separate one of the eggs, discarding the yolk. Add the egg white to the pan along with the second egg and cook to desired consistency. Add a pinch of salt and pepper.

5 – Add the frying cheese to the pan. Brown on both sides. Remove from the pan and pat dry to remove excess oil. Serve with sliced a sliced avocado, a turkey disk, sliced onions, and the thin slice of cheese.
