Fried Rice with Soy Sauce
2 cups Overnight Brown Rice
1 whole Green Onion (chopped, separate green and white parts)
1 whole Carrot (diced small)
1/2 whole Red Bell Pepper (diced small)
1 cup of Chopped Chinese Broccoli
2 whole Eggs (whites only)
1 tbsp Low-Sodium Soy Sauce
1 tbsp Dark Soy Sauce
1 tbsp Oyster Sauce
2 tbsp Cooking Wine
1/2 cup Water
1 tbsp Peanut Oil
Salt and Pepper to Taste
1 – In a covered saucepan, heat up water, carrots, and chopped broccoli. Cook for 5 minutes and turn off. Set aside.
2 – In a separate saucepan, heat up oil, spreading it across the whole pan. Add the red bell pepper and the white part of the green onion. Cook for 3 minutes on high heat.
3 – While stirring, add egg whites and cook until thoroughly cooked.
4 – While stirring, add egg whites and cook until thoroughly cooked.
5 – Add the remaining green onion. Taste and adjust salt and pepper to taste. Mix well and serve.
